Is a gas interlock system a legal requirement?
In 2009 a law was passed for gas interlock system to fitted in commercial kitchens. Making it a requirement by law for any commercial catering with natural gas appliances installed. Although for existing installation which in place before the year 2009 there are some discrepancies. Where no interlock system is required expect where all gas appliances installed have a flame failure device installed on the actual appliances.
And also for kitchen installed after 2009 and with gas interlock systems all appliances are still required to have a built-in flame failure device. If any of the appliances fitted doesn’t have a flame failure device then gas proving interlock system should be fitted.
What is a gas proving system?
A gas proving system prevent a gas leak downstream of the proving unit. By carrying out a gas tightness test for leak each time the extraction canopy is turn on and the kitchen gas interlock system is switched on. It allows a certain amount of gas to flow into the pipeline carries out a pressure test for about 2 minutes.
How does a gas interlock system work?
The interlock system will detect when the air supply and extraction canopy is working via a air pressure switch located within the extraction canopy duct or via current sensor device which sensor the switch live cable current to fan. If any of these device is present and positive then the gas interlock system will send power to the gas solenoid valve (automatic shut off valve) which will automatically open and allow gas to flow to the appliances installed in the kitchen.

What regulations apply to the installation of gas equipment used in catering premises?
Regulation 35 of the gas safety installation and use regulation states out all the requirements for a commercial catering installation in commercial properties. And must be obeyed by both employers and self employed. This regulation covers the installations of gas appliances, combustion flues, pipe sizing, gas pressure, safety devices and servicing.
